Rice Pudding

2 cups milk

1 cup cooked rice

1 tablespoon bacon drippings

1/4 teaspoon salt

1/3 cup raisins

2 eggs, beaten

Heat milk: add rice and bacon drippings. Add sugar, salt, and raisins to eggs, then slowly stir in the hot milk mixture. Pour into greased baking dish, set in pan of hot water. Bake in 350 degree F (moderate oven ) 1 hour, or until set. 4 servings

This recipe was taken from Betty Feezor's Carolina Recipes, Volume 11. Mrs. Feezor had an extremely popular cooking show in the 50's, 60's and 70's in Charlotte and Richmond and had an almost cult like following. During a day when more housewives were not working and were what we refer to as "housewives", there were Betty Feezor Clubs that met regularly and sometimes would visit the show. Her show was the first local show in the U.S. to be taped for later showing ( 1958 ).
