Pineapple Pie

1/4 cup cornstarch

2/3 cup sugar

1/4 tsp. salt

2 cups milk ( warmed )

3 egg yolks

2 tbs. butter or margarine

1 tsp. vanilla

1 20 oz. can crushed pineapple ( drained )

Combine cornstarch, sugar and salt in top of double boiler. Gradually add milk. Cook, stirring constantly until thick ( about 10 minutes ) Mixture must boil. Beat egg yolks in small bowl, add 1/4 cup of hot mixture to egg yolks. mix well. Stir egg yolks back into milk mixture. Cook 5 minutes. Stir in butter and vanilla. Add drained pineapple. Line pie plate with vanilla wafers. Pour mixture into pie plate. Top with meringue. Bake until brown.
